Pan Seared Chicken with Tomato Olive Relish

Serves: 2

Ingredients

2 teaspoons extra virgin oil
4-6 skinless chicken breasts
1/4 teaspoon salt
1/4 black pepper
1 tablespoon basil
1 tablespoon balsamic vinegar
1 cup cherry tomatoes
1/3 cup pitted olives

 

Directions

Heat a grill pan over medium heat. Add 1 teaspoon oil. Sprinkle chicken with salt and pepper. Add chicken to pan, cook 6 minutes on each side or until done. While chicken cooks, combine 1 teaspoon olive oil, basil, vinegar in a medium bowl. Add cherry tomatoes and olves, toss to coat. Serve relish with chicken! ENJOY!
