Rotisserie Seasoned Chicken

Ingredients
- 2 portion-size potatoes
- 2 portions chicken breast (about ½ pound)
- 1 tsp McCormick Rotisserie chicken seasoning
- 2 cups Romaine lettuce, chopped
- ½ cucumber, sliced
- ½ cup grape tomatoes
- 1tsp olive oil
- 1tbsp balsamic vinegar
- 2 tbsp fat-free sour cream or plain Greek yogurt
- 1 tbsp fresh parsely, chopped
Directions
- Preheat oven to 450°F
- Wash and dry potatoes, then pierce several times with a fork. Place directly on bottom oven rack and bake until tender, about 45 minutes.
- After potatoes have baked for about 25 minutes, lightly coat an 8″ x 8″ baking dish with cooking spray. Coat chicken breasts with rotisserie seasoning and place in baking dish. Bake on middle oven rack, until no longer pink in the center, about 20 minutes.
- In a large mixing bowl, combine lettuce, cucumber and tomatoes. Then drizzle with olive oil and balsamic vinegar, toss to coat. Divide into 2 serving bowls.
- Place portion of chicken and a portion size potato on each plate. Slice open the potatoes and top with Butter Buds and Greek yogurt. Sprinkle parsley over potatoes and chicken. Serve and enjoy!
