Broiled Grapefruit with Cottage Cheese

Ingredients

  • 1 tsp vanilla extract
  • 1 tsp stevia
  • 1/2 tsp cinnamon
  • 1/2 large grapefruit, sectioned
  • 8 oz low-fat, low-sodium cottage cheese
 

Directions

  1. Preheat broiler to high and make sure oven rack is near the top.
  2. In a small bowl, combine first three ingredients.
  3. Place grapefruit on a cookie sheet and pour vanilla mixture over the top.
  4. Broil for 3 minutes or until grapefruit is bubbly on top. Serve with cottage cheese.
