Chicken Coconut Curry

Ingredients
– 2 pounds chicken breast
– 1 cup coconut milk
– 2 cups broccoli, chopped
– 1 cup mushrooms, washed, chopped
– 1 onion, skin removed, chopped
– 1 tablespoon curry powder
– 1 clove garlic, chopped
– 1 teaspoon fresh ginger, skin removed, minced
Directions
In a large skillet, add coconut milk, chicken, broccoli, mushrooms, and onion. Cook on medium-high for 15 minutes. Add in curry powder, garlic and ginger. Turn heat down to medium-low and cook for another 15 minutes. Serve immediately.
