Clean & Lean Sirloin Roast

Ingredients
- 3 1/2 lb boneless beef sirloin roast
- 4 large garlic cloves, sliced thinly
- 2 tbsp olive oil
- 1 1/2 tsp crumbled dried thyme
- Ground pepper, as desired
Directions
- Preheat the oven to 450 degrees F.
- Next, place the roast in a roasting pan. Cut into the roast, making slits, and place sliced garlic into the slits.
- Rub the beef with olive oil, thyme, and then pepper, as desired. Roast in over for 10 minutes.
- Reduce the oven temperature to 250 degrees F and cook about 20 to 30 minutes per pound of roast, or until meat thermometer reads 115 degrees F to 125 degrees F.
- Let stand 15 to 20 minutes before carving. Slice thin before serving.
