Clean & Lean Sirloin Roast

Serves: 10-12

Ingredients

  • 3 1/2 lb boneless beef sirloin roast
  • 4 large garlic cloves, sliced thinly
  • 2 tbsp olive oil
  • 1 1/2 tsp crumbled dried thyme
  • Ground pepper, as desired
 

Directions

  1. Preheat the oven to 450 degrees F.
  2. Next, place the roast in a roasting pan. Cut into the roast, making slits, and place sliced garlic into the slits.
  3. Rub the beef with olive oil, thyme, and then pepper, as desired. Roast in over for 10 minutes.
  4. Reduce the oven temperature to 250 degrees F and cook about 20 to 30 minutes per pound of roast, or until meat thermometer reads 115 degrees F to 125 degrees F.
  5. Let stand 15 to 20 minutes before carving. Slice thin before serving.
