Crock Pot Cereal

Serves: 6-8

Ingredients

  • 1 cup buckwheat
  • 1 cup old fashioned oats
  • 1 cup quinoa
  • 9 cups water, milk, or non-dairy beverage (hemp, oat, hazelnut, almond, rice, or soy milk) or a combination
  • 2 Tbsp vanilla extract
  • 1 Tbsp cinnamon, nutmeg, or pumpkin pie spice

Directions

  1. Spray crock pot with non-stick canola spray. Place grains in crock pot.
  2. Fill with water and/or milk.
  3. Place crock pot on low, overnight, for 6-8 hours.
  4. Top with 2 Tbsp raw, unsalted nuts (almonds, walnuts, pecans) or seeds (sunflower, pumpkin, flax) and unsweetened applesauce, agave nectar, or Stevia.
  5. Greek low fat plain yogurt or cottage cheese are a great way to add protein and make the cereal a complete breakfast!
