Endive Stuffed with Cranberry Walnut Tuna Salad

Ingredients

  • 18 Endive leaves
  • 2 cans tuna
  • 2 Tbsp canola based mayonnaise, low fat
  • 1/2 finely diced celery
  • 1/4 cup finely diced red onion
  • 1/4 cup finely chopped walnuts
  • 1/2 cup chopped cranberries
  • Salt and pepper to taste
 

Directions

  1. Wash endive leaves and arrange on a platter.
  2. In a mixing bowl, combine remaining ingredients and mix together well.
  3. Scoop tuna salad into endive leaves and serve immediately.
