Endive Stuffed with Cranberry Walnut Tuna Salad

Ingredients
- 18 Endive leaves
- 2 cans tuna
- 2 Tbsp canola based mayonnaise, low fat
- 1/2 finely diced celery
- 1/4 cup finely diced red onion
- 1/4 cup finely chopped walnuts
- 1/2 cup chopped cranberries
- Salt and pepper to taste
Directions
- Wash endive leaves and arrange on a platter.
- In a mixing bowl, combine remaining ingredients and mix together well.
- Scoop tuna salad into endive leaves and serve immediately.
