Fresh Lima Beans

Ingredients
- 2 cups fresh lima beans
- 1 Tbsp olive oil
- 2 tsp red wine vinegar
- 1/8 tsp salt
- 1/2 cup quartered grape tomatoes
- 1/4 cup sliced kalamata olives
- 2 Tbsp chopped parsley
Directions
- Cook lima beans in simmering water for 20 minutes or until tender. Rinse with cold water; drain.
- Combine olive oil, vinegar and salt. Add beans, grape tomato, olives, and chopped parsley; toss well.
*Goes well with Lamb Chops and Cilantro Relish
