Fresh Lima Beans

Ingredients

  • 2 cups fresh lima beans
  • 1 Tbsp olive oil
  • 2 tsp red wine vinegar
  • 1/8 tsp salt
  • 1/2 cup quartered grape tomatoes
  • 1/4 cup sliced kalamata olives
  • 2 Tbsp chopped parsley
 

Directions

  1. Cook lima beans in simmering water for 20 minutes or until tender. Rinse with cold water; drain.
  2. Combine olive oil, vinegar and salt. Add beans, grape tomato, olives, and chopped parsley; toss well.

*Goes well with Lamb Chops and Cilantro Relish
