Fruit Medley

Ingredients
- 1/2 orange, segmented
- 1/2 tangerine, segmented
- 5 strawberries, diced
- 2 Tbsp blueberries
- 2 Tbsp raspberries
- 2 Tbsp blackberries
- 1 Tbsp balsamic vinegar
- 1/2 tsp cracked black pepper
- 1 tsp fresh mint leaves, cut into fine strips
- 1 tsp orange zest
- 1 egg white
- 2 tsp sugar
- 1/2 tsp vanilla beans
Directions
- Mix together fruit, vinegar and pepper, and set aside.
- Take vanilla beans and cut in halth lengthways. Using the back of your paring knife, scrape the bean out of the husk and discard empty husks. Combine vanilla bean with egg white and sugar, and whip until a stiff peak forms.
- Arrange marinated fruit in a bowl and top with meringue, mint and orange zest.
