Gluten Free Polenta Bites with Spinach Dip and Grape Tomatoes

Ingredients

  • 1 wheel pre-made gluten-free polenta
  • 1 cup low-fat sour cream
  • 1 cup pre-made gluten-free pesto sauce
  • 1 cup grated parmesan cheese
  • 2 cups frozen chopped spinach, defrosted and drained
  • 18 grape tomatoes, washed and sliced in half
 

Directions

  1. Slice polenta wheel into 18 equal sized slices and arrange on a serving platter.
  2. In a mixing bowl, combine sour cream, pesto sauce, parmesan cheese, and spinach and mix together well.
  3. Spoon spinach mixture on top of each piece of polenta and top with pieces of tomato.
  4. Serve immediately.
