Gluten Free Polenta Bites with Spinach Dip and Grape Tomatoes

Ingredients
- 1 wheel pre-made gluten-free polenta
- 1 cup low-fat sour cream
- 1 cup pre-made gluten-free pesto sauce
- 1 cup grated parmesan cheese
- 2 cups frozen chopped spinach, defrosted and drained
- 18 grape tomatoes, washed and sliced in half
Directions
- Slice polenta wheel into 18 equal sized slices and arrange on a serving platter.
- In a mixing bowl, combine sour cream, pesto sauce, parmesan cheese, and spinach and mix together well.
- Spoon spinach mixture on top of each piece of polenta and top with pieces of tomato.
- Serve immediately.
