Jamaican Salmon

Ingredients

  • 1 tbsp Jamaican seasoning
  • 1/4 cup crushed high-fiber cereal (try spelt flakes)
  • 2 4-oz pieces salmon
  • 2 tomatoes, chopped
  • 1/4 onion, chopped
  • 1/4 cup mango, chopped
  • 1 clove garlic, minced
  • 1/2 tsp chopped fresh basil
  • Sea salt and pepper to taste
  • Splash balsamic vinegar
 

Directions

  1. Combine Jamaican seasoning and cereal. Dip salmon into mixture and coat well. Broil for 10 minutes until flaky.
  2. Meanwhile, combine remaining ingredients and let sit for 5 minutes. Pour mixture over salmon and serve with salad greens.
