Jamaican Salmon

Ingredients
- 1 tbsp Jamaican seasoning
- 1/4 cup crushed high-fiber cereal (try spelt flakes)
- 2 4-oz pieces salmon
- 2 tomatoes, chopped
- 1/4 onion, chopped
- 1/4 cup mango, chopped
- 1 clove garlic, minced
- 1/2 tsp chopped fresh basil
- Sea salt and pepper to taste
- Splash balsamic vinegar
Directions
- Combine Jamaican seasoning and cereal. Dip salmon into mixture and coat well. Broil for 10 minutes until flaky.
- Meanwhile, combine remaining ingredients and let sit for 5 minutes. Pour mixture over salmon and serve with salad greens.
