Kale and Garlic Potatoes

Ingredients

  • 12 ounces small baby potatoes, halved
  • 1 1/2 Tbsp canola oil
  • 2 Tbsp sliced garlic
  • 3 cups chopped kale
  • 1 Tbsp water
  • 1 tsp sesame oil
  • 1/2 tsp salt
  • 1/4 tsp pepper
 

Directions

  1. Place potatoes in a saucepan; cover with water. Bring to a boil. Cook 8 minutes; drain.
  2. Heat a large skillet over medium-high heat. Add canola oil.
  3. Add potatoes and garlic; cook 3 minutes. Add kale and 1 Tbsp water. Cover and cook 3 minutes.
  4. Add sesame oil, salt, pepper; toss.
