Mediterranean Salmon

Serves: Serves 4

Ingredients

– 2 tomatoes, chopped
– 3 tablespoons olive oil
– 1 tablespoon red wine vinegar
– 1/2 cup olives, pitted, chopped
– 1/4 cup red onions, chopped
– 2 tablespoons capers, drained
– Sea salt and ground pepper to taste
– 4 (6 oz.) salmon fillets
– 1 tablespoon coconut oil
– 1/3 cup fresh basil, chopped

 

Directions

In a medium bowl combine tomatoes, olive oil, vinegar, olives, onion, capers, salt and pepper. Set aside. Heat saute pan with coconut oil over medium-high heat. Saute salmon 3 to 4 minutes per side or until cooked through. Add basil to reserved tomato mixture. Serve with salmon.
