Minty Quinoa and Peach Salad

Ingredients
- 2 cups boiling water
- 1 cup uncooked quinoa
- 3 tablespoons fresh lemon juice
- 2 tablespoons fresh lime juice
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon agave
- ½ teaspoon sea salt
- ¼ teaspoon freshly ground black pepper
- 2 cups diced, peeled peach (about 2 medium)
- 2 cups diced, peeled jicama
- 1 cup finely chopped fresh mint
Directions
- Combine boiling water and quinoa in a large bowl; let stand 1 hour or until water is absorbed. Combine juices and next 4 ingredients (through pepper), stirring well with a whisk. Add peach, jicama, and mint to quinoa; toss to combine. Drizzle dressing mixture over quinoa mixture; toss to coat. Chill 1 hour.
