Oriental Chicken Salad

Ingredients

  • 4 portions cooked chicken (about 1 lb)
  • 1 bag (16 oz) coleslaw mix
  • 4 green onions, chopped
  • 2 tbsp light sesame oil
  • 1/3 cup rice vinegar
  • ¼ cup lite soy sauce
  • ½ tsp ground ginger
  • 1 cup crisp brown rice noodles
 

Directions

  1. In a large mixing bowl, combine cooked chicken, coleslaw mix and green onions.
  2. In a small mixing bowl, combine sesame oil, rice vinegar, soy sauce and ginger. Drizzle over chicken mixture and toss to coat.
  3. Divide chicken salad into four portions. Top with gluten free brown rice chow mein noodles, serve and enjoy!
