Pan Seared Mahi-Mahi Tacos with Mango Avocado Salsa

Ingredients

  • 1 large mango, diced
  • 1 tomato, diced
  • 1 avocado, diced
  • 1 red onion, diced
  • ½ cup cilantro, finely chopped,
  • 1 clove fresh garlic, finely chopped
  • ¼ cup lime juice
  • 4 fresh mahi-mahi steaks
  • 2 tablespoons extra virgin olive oil
  • Salt to taste
  • Pepper to taste
  • 8 corn tortillas

Directions

  1. In a medium-sixed mixing bowl, combine mango, tomato, avocado, red onion, cilantro, garlic, and lime juice. Season with salt. Cover and refrigerate until ready to serve tacos.
  2. In a large sauté pan, heat olive oil over medium-high heat.
  3. Sprinkle salt and pepper over Mahi-Mahi steads and place each in hot sauté pan. Cook for about 4 to 6 minutes or until fish is easy to flip. Turn over and cook an additional 4 minutes until cooked through.
  4. Slice each Mahi-Mahi steak into strips. Evenly distribute strips of fish among the 8 corn tortillas and top with a generous portion of mango avocado salsa.
  5. Top with grated low-fat cheese if desired.
