Peach Crisp

Ingredients
- 1 ½ cups fresh or frozen unsweetened peach slices
- 2 tablespoons rolled oats
- 2 T Stevia or 1 T agave nectar
- 1 tablespoon spelt flour
- 1 tablespoon whipped butter, softened
- 1/8 teaspoon ground ginger, nutmeg, or cinnamon
- 2 tablespoons chopped pecans, walnuts, or almonds (optional)
- Fat-free half and half (optional)
Directions
- Preheat oven to 375F. For filling: Thaw fruit, if frozen; do not drain.
- Divide fruit between two 8 to 10 ounce ramekins or 10 ounce custard cups.
For topping:
- In a small bowl, stir together oats, granulated sugar or brown sugar, flour, butter, and ginger.
- If desired, stir in the chopped nuts. Sprinkle the topping over the peaches.
- Bake for 25 to 30 minutes or until fruit is tender and topping is golden brown.
- Serve warm. If desired, serve with fat-free half and half.
