Peach Crisp

Ingredients

  • 1 ½ cups fresh or frozen unsweetened peach slices
  • 2 tablespoons rolled oats
  • 2 T Stevia or 1 T agave nectar
  • 1 tablespoon spelt flour
  • 1 tablespoon whipped butter, softened
  • 1/8 teaspoon ground ginger, nutmeg, or cinnamon
  • 2 tablespoons chopped pecans, walnuts, or almonds (optional)
  • Fat-free half and half (optional)
 

Directions

  1. Preheat oven to 375F. For filling: Thaw fruit, if frozen; do not drain.
  2. Divide fruit between two 8 to 10 ounce ramekins or 10 ounce custard cups.

For topping:

  1. In a small bowl, stir together oats, granulated sugar or brown sugar, flour, butter, and ginger.
  2. If desired, stir in the chopped nuts. Sprinkle the topping over the peaches.
  3. Bake for 25 to 30 minutes or until fruit is tender and topping is golden brown.
  4. Serve warm. If desired, serve with fat-free half and half.
