Poached Pears

Ingredients

Pears:

  • 2 D’Ankou pears
  • 2 cups port wine
  • 1/2 cinnamon stick
  • 1 start anise
  • 6-8 pecans

Sauce:

  • 1/2 cup strawberries, washed, stemmed and diced
  • 1/2 cup water
  • 1 Tbsp honey
 

Directions

Pears:

  1. Slice pears into large wedge. In a cause pan combine pears, white wine, cinnamon and star anise. Bring to a boil, then reduce to a simmer and allow to braise for about 12 minutes or until pears are fully cooked and the wine has absorbed into the pears.

Sauce:

  1. In a blender puree the strawberries and water until smooth. Strain into a sauce pan, add honey and bring to a boil. Continue cooking until the liquid thickens into a sauce consistency

To serve:

  1. Arrange pears in the center of four plates, surround with strawberry sauce and top with pecans.
