Pork Cacciatore

Ingredients
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 4 ounces mushrooms, sliced
- 1 clove garlic, peeled and chopped
- 1 pound boneless pork loin, cut into bite-size pieces
- 1 can (14 ½ ounces) diced tomatoes
- 1 teaspoon dried Italian seasoning
- ½ teaspoon Stevia or Truvia
- ½ teaspoon sea salt
- ¼ teaspoon black pepper
- 3 cups cooked brown rice
Directions
- Heat oil in a large nonstick skillet over medium-high heat. Add the onion, mushrooms and garlic and cook for 3 minutes, stirring occasionally, until softened.
- Stir in pork, tomatoes, Italian seasoning, stevia, sea salt and black pepper. Cover and simmer on medium low, stirring occasionally, for 10 minutes.
- Serve with cooked rice.
