Pork Cacciatore

Serves: 4

Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 4 ounces mushrooms, sliced
  • 1 clove garlic, peeled and chopped
  • 1 pound boneless pork loin, cut into bite-size pieces
  • 1 can (14 ½ ounces) diced tomatoes
  • 1 teaspoon dried Italian seasoning
  • ½ teaspoon Stevia or Truvia
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper
  • 3 cups cooked brown rice
 

Directions

  1. Heat oil in a large nonstick skillet over medium-high heat. Add the onion, mushrooms and garlic and cook for 3 minutes, stirring occasionally, until softened.
  2. Stir in pork, tomatoes, Italian seasoning, stevia, sea salt and black pepper. Cover and simmer on medium low, stirring occasionally, for 10 minutes.
  3. Serve with cooked rice.
