Refreshing Cucumber Salad

Ingredients
- 2 Tbsp extra-virgin olive oil
- 1 Tbsp white wine
- 1 Tbsp lemon juice
- 1/4 tsp Kosher salt
- 1/4 tsp freshly ground pepper
- 1/2 cup sliced red bell pepper
- 1/2 cup sliced green bell pepper
- 3 Tbsp chopped fresh chives
- 1 Tbsp chopped fresh flat leaf parsely
- 1 cucumber, sliced
Directions
- Combine first 6 ingredients in a medium bowl, stirring with a whisk.
- Add bell peppers and remaining ingredients to mixture; toss gently to coat.
