Refreshing Cucumber Salad

Ingredients

  • 2 Tbsp extra-virgin olive oil
  • 1 Tbsp white wine
  • 1 Tbsp lemon juice
  • 1/4 tsp Kosher salt
  • 1/4 tsp freshly ground pepper
  • 1/2 cup sliced red bell pepper
  • 1/2 cup sliced green bell pepper
  • 3 Tbsp chopped fresh chives
  • 1 Tbsp chopped fresh flat leaf parsely
  • 1 cucumber, sliced
 

Directions

  1. Combine first 6 ingredients in a medium bowl, stirring with a whisk.
  2. Add bell peppers and remaining ingredients to mixture; toss gently to coat.
