Salmon with Red Peppers and Leeks

Ingredients
- 1 leek, white part with a small amount of green, cut into strips
- 1 sweet red bell pepper, cut into strips
- 2 Tbsp chopped fresh Italian flat parsley
- Grated rind and juice of 1/2 a fresh lemon
- 2 fresh salmon fillets, approximately 3 oz each
- 1/4 tsp paprika
- Sea salt and pepper to taste
Directions
- In the bottom of a 2 1/2 quart microwave safe dish, place the leek, red pepper, parsley, lemon rind and lemon juice. Stir well, cover and cook on high 3 minutes.
- Stir vegetables, place salmon fillets on top and sprinkle with paprika, salt and pepper. Cover and cook on high an additional 4 1/2 minutes; let rest 5 minutes before serving.
