Salmon Spinach Salad

Ingredients

  • 2 Tbsp walnuts, roughly chopped
  • 2 cups spinach
  • 1 pouch (6oz) pink salmon
  • 2 tbsp chopped red onion
  • 1/2 tbsp olive oil
  • 2 tbsp grapefruit juice
  • 1 tbsp white wine vinegar
 

Directions

  1. Toast walnuts until golden brown. In a medium bowl, combine spinach, salmon and walnuts.
  2. Meanwhile, combine last four ingredients in a small bowl. Whisk to blend and pour over salad.
