Smoked Salmon Salad

Ingredients
- ½ cup light sour cream or plain Greek yogurt
- 2 Tbs chopped chives
- ¼ cup olive oil
- 2 Tbs fresh lemon juice
- 1 clove garlic, peeled and chopped
- 1 Tbs chopped fresh mint
- 1 head Boston lettuce, separated into leaves
- 2 medium red and/or yellow tomatoes, thinly sliced
- 1 small red onion, sliced
- ¼ lb. sliced smoked salmon
Directions
- In small bowl, stir together sour cream and chives until blended.
- In separate bowl, whisk together olive oil, lemon juice, garlic and mint 30 seconds, or until combined.
- Season lemon-garlic dressing with salt and pepper, if desired.
- Divide Boston lettuce leaves evenly among 4 plates.
- Divide tomato slices and red onions evenly among plates, alternating and slightly overlapping tomatoes and onions.
- Drizzle with lemon-garlic dressing.
- Divide smoked salmon slices and sour cream mixture evenly among plates. Garnish with fresh chives, if desired.
