Spinach Bean Salsa Scramble

Ingredients
- 1 omega-3 egg
- 3 cups fresh spinach
- 1 cup black beans, cooked (or any beans of your choice)
- 1/4 cup salsa
Directions
1. In a skillet, scramble or poach egg on medium-low heat.
2. Remove egg from skillet and add spinach plus a little water. Cover with a lid and let steam until bright green, about 2 minutes.
3. Remove spinach and add beans to heat through, about 3 minutes.
4. Remove beans and add to a large soup bowl. Add spinach and top with the egg and salsa.
