Springtime Rhubarb Crumble

Ingredients
- 1lb rhubarb, sliced
- 1/4 cup Truvia or stevia
- 1 tsp ground cinnamon
Crumble:
- 1/2 cup canola oil
- 1/2 cup rolled oats, Gluten Free if needed
- 1/2 cup wheat-free or gluten-free flour
- 1 tsp ground cinnamon
- 1 tsp Truvia or stevia
- Cooking spray
Directions
- Preheat oven to 350 degrees F. Prepare a shallow baking dish with light coating of cooking spray.
- Place rhubarb in baking dish. Dust with cinnamon and sugar.
- In separate bowl, mix canola oil, oats, flour and cinnamon. Mix until concoction resembles bread crumbs. Stir in the stevia. Spoon over the rhubarb. Bake for 40 minutes. Remove from oven and serve hot!
