Summer Squash Soup

Ingredients
– 2 tablespoons olive oil
– 2 medium onions, peeled, sliced
– 1 pound summer squash, sliced or cubed
– 1 head garlic, peeled, chopped
– 5 cups vegetable or chicken broth
– 1 teaspoon fresh lemon
– Ground pepper to taste
Directions
Saute onion, squash, and garlic in olive oil until golden.
Add broth and season. Simmer 10 to 15 minutes until tender.
Place in blender and blend 30 to 45 seconds until smooth.
Serve warm.
