Tropical Fruit and Vegetable Salad with Chili and Cilantro Dressing

Ingredients

Dressing

  • 1 ½ Tbsp olive oil
  • 3 tsp lime juice
  • 1 tsp agave nectar
  • ½ fresh red chili, seeded and minced
  • 2 tsp minced cilantro

Salad

  • ¼ medium red onion, halved and sliced
  • ½ English cucumber, unpeeled and thinly sliced
  • 2 kiwi fruits, peeled and sliced
  • 1 large mango, sliced
 

Directions

  1. Whisk together the dressing ingredients. Add the red onion to the dressing and marinate for 30 minutes.
  2. Arrange the cucumber, kiwi, and mango in a shallow serving bowl. Arrange the marinated onions with all the dressing on top of the mango mixture.
