Tuna Salad Cucumber Boats

Ingredients

– 1 large cucumber
– 1 3-4 oz can tuna, drained
– 2 hard boiled eggs, chopped
– ½ cup finely chopped celery
– 1 tbsp sweet onion, chopped fine
– ¼ cup low fat mayonnaise 
– 2 tbsp relish
– 1 tsp lemon juice
– ¼ tsp black pepper

 

Directions

  1. Cut cucumber in half, length-wise. Remove seeds and carve out cucumber flesh. Run a peeler over the bottom of the cucumber so it sits flat.
  2. In a bowl, mix together tuna, chopped egg, chopped celery and onion. Stir gently.
  3. Add low fat mayonnaise and relish, mix until smooth.
  4. Sprinkle pepper and mix again
  5. Fill the cucumber with tuna mix and serve.
