Tuna Salad Cucumber Boats

Ingredients
– 1 large cucumber
– 1 3-4 oz can tuna, drained
– 2 hard boiled eggs, chopped
– ½ cup finely chopped celery
– 1 tbsp sweet onion, chopped fine
– ¼ cup low fat mayonnaise
– 2 tbsp relish
– 1 tsp lemon juice
– ¼ tsp black pepper
Directions
- Cut cucumber in half, length-wise. Remove seeds and carve out cucumber flesh. Run a peeler over the bottom of the cucumber so it sits flat.
- In a bowl, mix together tuna, chopped egg, chopped celery and onion. Stir gently.
- Add low fat mayonnaise and relish, mix until smooth.
- Sprinkle pepper and mix again
- Fill the cucumber with tuna mix and serve.
