Turkey Mac

Ingredients
- 1/2 lb lean ground turkey
- 4 oz (dry) wheat free elbow macaroni
- 2 medium fresh tomatoes, diced
- 1 (8 oz) can tomato sauce
- 1 tsp Italian seasoning
- 1/4 cup shredded part-skim mozzarella cheese
Directions
- Preheat oven to 350F. Spray a large skillet with nonstick spray, then place over medium-high heat. Add turkey and brown, breaking up with spatula, until cooked through.
- Meanwhile, boil water in a medium saucepan. Add pasta and cook until al dente.
- Combine turkey, pasta and remaining ingredients in an oven safe dish. Stir well, then bake for 15 minutes or until mixture is bubbling and cheese has melted.
