Turkey Mac

Ingredients

  • 1/2 lb lean ground turkey
  • 4 oz (dry) wheat free elbow macaroni
  • 2 medium fresh tomatoes, diced
  • 1 (8 oz) can tomato sauce
  • 1 tsp Italian seasoning
  • 1/4 cup shredded part-skim mozzarella cheese
 

Directions

  1. Preheat oven to 350F. Spray a large skillet with nonstick spray, then place over medium-high heat. Add turkey and brown, breaking up with spatula, until cooked through.
  2. Meanwhile, boil water in a medium saucepan. Add pasta and cook until al dente.
  3. Combine turkey, pasta and remaining ingredients in an oven safe dish. Stir well, then bake for 15 minutes or until mixture is bubbling and cheese has melted.
