Turkey Meatballs

Serves: 6-8

Ingredients

  • 2 tbsp extra virgin olive oil
  • 1 large sweet onion, peeled and finely chopped
  • 1 large ripe tomato, chopped
  • 1 red bell pepper, finely chopped
  • 2 stalks celery, trimmed and finely chopped
  • 1/4 cup celery greens, finely chopped
  • 4 garlic cloves passed through a garlic press, divided
  • 1 cup low-sodium chicken broth
  • 3 tbsp plus 1/2 cup ground flaxseeds
  • 1lb lean ground turkey or chicken
  • 1/2 cup Ryvita crackers ground into crumbs
  • 3/4 egg whites
  • 3/4 tsp poultry seasoning
  • Sea salt and black pepper, to taste
 

Directions

  1. Heat oil and sauté onion, tomato, pepper, celery, greens and 2 of the garlic cloves, about 15 minutes.
  2. Stir in chicken broth and 3 tbsp flaxseeds, cooking about 20 minutes.
  3. Preheat oven to 375 degrees F.
  4. Combine turkey, Ryvita crackers, remaining flaxseeds, egg whites, poultry seasoning and remaining 2 garlic cloves in a large bowl. Shape mixture into 1-inch balls and place onto a parchment-lined baking sheet. Bake for 12 to 15 minutes or until golden. Season with salt and pepper and serve hot with sauce.
