Turkey Pan Pizza with Oat Crust

Serves: 1

Ingredients

  • 1/2 cup oats
  • 1/2 tsp baking powder
  • 1/4 tsp ground flaxseed
  • 2 oz extra lean ground turkey
  • 1 cup chopped spinach
  • 1/4 cup unsalted tomato paste
  • 1/4 cup low-fat cottage cheese
  • 2 tbsp onion, chopped
  • 2 tbsp red bell pepper, chopped
  • 1/4 cup sliced mushrooms
 

Directions

1. Preheat oven to 350 degrees.
2. In a bowl, mix together the first 4 ingredients. Flatten this oatmeal cake dough into a disc shape onto a baking sheet. Bake for 5 minutes, flip over and bake for 5 more minutes.
3. In a mixing bowl, combine remaining ingredients. Spread out on top of the oatmeal cake. Bake until cheese melts.
