Turkey Salad

Ingredients

  • ½ cup low-fat plain yogurt
  • 1 tsp curry
  • ½ tsp ground ginger
  • ½ tsp dried thyme
  • 1/3 cup raisins
  • 2 portions cooked turkey breast (about ½ lb), chopped
  • 1 stalk celery, sliced
  • 2 cups mixed salad greens
  • 2 tbsp sliced almonds
 

Directions

  1. In a large mixing bowl, combine yogurt, curry, ginger, and thyme. Stir in raisins, cover and refrigerate for 15 minutes.
  2. Combine precooked, chopped turkey and celery with yogurt mixture.
  3. Line 2 plates with mixed salad greens. Top each with a portion of turkey mixture and sprinkle with sliced almonds. Serve and enjoy!
